SWISS takes tomorrow’s talents aloft as Marmite Youngsters showcase their skills in its inflight cuisine

SWISS is putting a firm accent on culinary creativity and innovation for the next three months: from 4 December until 4 March, the airline will be serving menu creations of the winners of the 2024 Marmite Youngster Awards on its long-haul services from Switzerland and in selected airport lounges. So instead of the usual guest top chef highlighting the cuisine of their home canton, the airline will be showcasing the talents of tomorrow: young, bold, and brimming with ideas. In doing so, SWISS aims to proactively promote new talents and present their innovative ideas to an international audience.
Swiss International Air Lines (SWISS) has long been serving special meal creations to inflight guests on its long-haul services from Switzerland. And for the next three months, SWISS First and SWISS Business travelers and visitors to its SWISS First Lounges at Zurich Airport can enjoy the concoctions of the talents of tomorrow – the winners of the 2024 Marmite Youngster Awards.
The marmite culinary magazine has been distinguishing promising young talents on Switzerland’s gastronomy scene since 2011. And SWISS’s inflight guests will now be treated to meal delights and dessert surprises from chef Fabio Vulcano and pastry chef Jonathan Pichler, with matching wines selected by sommelière Martina Wilhelm. On the ground, meanwhile, SWISS First Lounge guests at Zurich Airport will be offered a specially concocted Alpine Breeze Mule aperitif and an amuse-bouche created by chef de rang Lynn-Ann Meier.

Veal ossobuco with yuzu jus and ‘pure Swiss alpine perch’
SWISS First guests can look forward to some exquisite delights. Their choice of first course includes a potato and kale mousse with crispy salsiz crumble; and for their main course they can choose between veal ossobuco with yuzu jus and veal tongue or cod with Oona caviar. The First Class inflight offering is rounded off by a buckwheat mousse with sea buckthorn compote created by pastry chef Jonathan Pichler.
SWISS Business travelers will be offered a starter of cured char with calamansi gel and pickled parsnip, followed by a main course of brasato – beef braised in red wine sauce – with creamy polenta and ratatouille or Oona’s ‘pure Swiss alpine perch’. The Business Class offering concludes with a hazelnut slice with Bionda caramelized white chocolate mousse and marinated plums.
SWISS Premium Economy travelers can look forward to a menu featuring a range of Swiss regional specialties.
Culinary delights aloft together with gategourmet
